Not all my leftovers made the trip to the Great White North to my sister's house yesterday.  We had plenty to share and plenty to keep at home for future meals. But after two days of traditional turkey dinners, my family is going to revolt if I serve them Thanksgiving one more time.  Turkey sandwiches aren't going to cut it either.  Instead, I like to disguise leftovers by serving them in different ways.

After making stock from the turkey carcass, I divide up the rest of the meat and freeze it in 2-cup portions.   It's great to have cooked turkey (or chicken, which are is basically interchangeable with turkey in recipes) around to make all kinds of quick dinners later.  With the holidays and basketball season breathing down my neck, quick dinners are definitely going to be needed around here!

I've come up with quite a few ways to serve the leftover turkey, so no one gets bored with it.

A little leftover magic is definitely going to come in handy on Monday--it's Cyber Monday, and that means I'll want to spend more time shopping and less time cooking.
