Several years ago, my mom began an ambitious project: knitting a twin-size afghan for each of her grandchildren. 
It takes her about a year to complete each one, and she's only about halfway through this project right now, with four grandchildren yet to receive one of these blankets.
Usually she chooses colors that go with the grandchild's room decor. My older son got a green-and-white afghan. But right after she and my daughter chose a rainbow of pretty pastel colors for her blanket, my daughter got the brilliant idea of painting her room orange. To her credit, Mom stuck to her guns--she'd already started knitting and couldn't return the yarn. So my daughter got that pastel afghan for her birthday, and to her credit, she's never complained about it clashing. She's just happy that it's warm and soft and that it was made just for her.
Maybe a nice Mother's Day gift for my mom would be some custom-printed labels that read something like, "Knitted Just for You by Grannie."
