If you haven't already carved your jack-o'-lantern, what are you waiting for?   It's time to get a nice big pumpkin and choose between silly or scary, and get to work.  jack-o-lantern-1 Make sure you have a good sharp knife for this job!

My favorite part about making jack-o'-lanterns isn't the finished pumpkin--it's what was inside the pumpkin that counts for me.  I like taking the pumpkin seeds and roasting them for a delicious snack.  If you've never roasted pumpkin seeds before, don't be afraid that it's a complicated thing.  And the result is nothing short of delicious!

Just remove the pumpkin seeds from the stringy pulp as quickly as you can after carving the pumpkin.  Then rinse off the seeds in a colander.  Line a baking sheet with foil and spray the foil with a little nonstick baking spray.  Spread the seeds onto the prepared foil, and pat the extra water off with a paper towel.  Sprinkle with salt.  Then bake at 300 for about 20 minutes, checking after 10 minutes and stirring if necessary.   Let them cool, and then enjoy!
